Chicken Enchilada Pasta

We’re crazy for these diner-style sandwiches, which get an extra punch of crunch from toasted buns and onion rings.

Used 6-quart slow cooker


  • 3 Pounds Boneless chuck roast
  • 1 1/2 Cups Ketchup
  • 1/4 Cup Brown sugar
  • 1/4 Cup Apple cider vinegar
  • 2 Tablespoons Prepared mustard
  • 2 Tablespoons Worcestershire sauce
  • 1 Teaspoon Liquid smoke
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Pepper
  • 1/4 Teaspoon Garlic powder
  • Onion rings, cooked
  • 1 Cup Shredded cheddar cheese
  • Hamburger buns, split and toasted


  1. Step One

    Place roast in the slow cooker.

  2. Step Two

    Combine all other ingredients except for onion rings, cheese, and buns.

  3. Step Three

    Pour over the roast.

  4. Step Four

    Cover and cook on HIGH for 4–5 hours or on LOW for 8–10 hours.

  5. Step Five

    Shred meat with forks.

  6. Step Six

    Spoon onto bottom of bun, sprinkle with cheese, top with onion rings, and cover with bun

    where do you get the liquid smoke from? thinking about making this for either tomorrow or wednesday. sounds yummy!!!

    Easy and very good. Followed sauce recipe pretty close but only used about 1 TBL of brown sugar. You can adapt to your taste by adding hot sauce or leaving out the liquid smoke, etc. The sauce made more than enough for my roast that was a bit under 3lb. You could even make this easier by using your favorite commercial BBQ sauce. But, be sure to cook the full time so the meat is tender and shreds nicely. I returned the beef to the cooker with the sauce and kept it warm until serving, infused more flavor. DO NOT forget the cheese and especially the onion rings (get good quality ones) as they really make a good sandwich great! Loaded up with beef and rings, you may end up eating this one with a fork.
