Cheesy Ham and Potato Casserole – A delicious recipe made with a slow cooker
Ingredients
- 1- 1.5 Pounds Ham, cubed
- 8 Red Potatoes, peeled and sliced
- 1 Small Onion, diced
- 2 Cups Cheddar, grated
- 1 Can Cream of Mushroom Soup
Directions

Step One
Layer in this order: 1/2 ham, 1/2 potatoes, 1/2 cheese, all the onion, rest of ham, rest of potatoes, rest of cheese, pour soup on top.

Step Two
Cook on low heat 7-8 hours.

Made this tonight. Delish! 3 Kids, husband and i loved it!
I was worried would be dry, but wasn’t at all.
Was plenty for all 5 of us, with seconds and still had leftovers.
Best part (or maybe worse) house smelled yummy all day! Great for the leftover ham. Definitely going in the rotations on recipes!

Mine turned out perfect…it was very good. My 14 year old said it reminded him of a loaded potato. Will make again, great for leftover ham!!!

Ok, I know I must have done something wrong with this recipe because, I used a potato slicer and followed the recipe exactly and my potatoes were grey/brown and not cooked properly at all, my husband was a good sport and tried to eat it anyway but decided Taco Bell was a better choice. Can anyone tell me where I went wrong?

Could you use southern style hashbrowns rather than sliced potatoes? And could you add frozen veggies as well so it’s an all in one style casserole?

Is your slow cooker programmable, Connie? If so, I would just set it to cook on low for 6 hours and then it can switch to the warm setting for the last 3-4 hours. And I would add a little (maybe 1/2 cup) of chicken broth instead of water for more flavor.

I’m wanting to use this recipe during the week, so the crock pot would be on for at least 9 hours before anyone is home. Should I add a soup can of water or another can of soup so it doesn’t dry up?

You don’t have to have a mandolin slicer, just slice them. They don’t have to be paper thin…happy crockin’!

I am preparing this for the first time. It is in my crockpot as I type. =) My husband works such odd hours that this meal will be eaten by me and our 3 year old son. Thanks for this website! I have set a goal for myself that for the next month, each supper I prepare at home will be made in the crockpot! It gives my oven a break!

You sure can. Idaho potatoes will be a little softer than red potatoes but it will work.

Can you cook this in 4-6 hours by using high? It’s hard to be home for this to cook 7-8 hours. Either it’s cooking way too long or not long enough.

This is in my crock pot right now and I can’t get over how great it smells!! Would using swiss cheese be an option as well?? I made it as indicated, but, I have a casserole recipe (made in the old-fashioned oven) that uses swiss cheese, potatoes, ham and broccoli and wondered if swiss would work in the crock pot?

Jack, It’s according how hearty your eaters are. It should easily feed about 4-6 men. (I’m assuming men since it is a hunting trip)

Since I am from WI and live near a cheese factory, I substituted cheese curds and used some velveeta cheese too. I also added a can of cream of celery with the can of cream of mushroom soup! It’s cooking right now!

Use a regular 10 3/4 oz can of cream of mushroom soup.
I sub a can of cream of celery soup a lot of times when a recipe calls for cream of mushroom soup. I’m not a big fan of the mushroom either, Toni :) cRockin’ Roll!
