Soy Chicken

Temp Low

Chicken enchiladas are an easy meal when made in the slow cooker.  Simply place all ingredients together and cook on low all day, and come home to a delicious, chicken enchiladas dinner.

Ingredients

  • 1 large Can Enchilada sauce
  • 4 Chicken breast, cooked and cut into small pieces
  • 2 Cans Cream of chicken soup
  • 1 small Can Sliced black olives
  • 2 Dozen corn tortillas
  • 1 small Onion, chopped
  • 2 Cups Grated sharp cheddar cheese

Directions

  1. Step One

    Mix together the soup, olives& onions.

  2. Step Two

    cut tortillas into wedges.

  3. Step Three

    Layer crock pot with enchilada sauce, tortillas, soup mixture, chicken& cheese to the top ending with cheese.

  4. Step Four

    Cook on low all day.

    so you have to cook the chicken before you put it in the crockpot?

    I’m a single gal and made this and ate leftovers for many days after. (Which, I hate leftovers). It was so good. I added a big heaping scoop of sour cream on top before I left it to cook. Yummy. :)
