Chicken Taco Chili – A tasty recipe for the slow cooker.

Ingredients

  • 1 Can Diced tomatoes
  • 2 Cans Rotel tomatoes
  • 1 Can Tomato sauce
  • 1 Can Black beans, rinsed and drained
  • 1 Can Kidney beans, rinsed and drained
  • 1 Can Hominy or 1 can whole kernel corn
  • 1 Package Taco seasoning
  • 1/2 Teaspoon Ground cumin
  • 1 Med onion, chopped
  • 1 Pound Chicken breasts, boneless, skinless (2-3 pieces)

Directions

  1. Step One

    Put all ingredients, except chicken breast, into slow cooker. Stir well.

  2. Step Two

    Place uncooked chicken breast on top.

  3. Step Three

    Cook on low for 8 hours, high for 4 hours.

  4. Step Four

    30 minutes prior to serving, pull chicken out and shred.

  5. Step Five

    Return to crock pot and stir. Cook 30 more minutes.

  6. Step Six

    Can be served with rice, chips, flour tortillas. Garnishes can include sour cream, avocados, jalapenos, cheese.

    Deidra, you could add about 2 quarts chicken or beef broth (that’s usually half a box) and that will make thin it out quite a bit for ya! Add more or less according to you taste.

    pretty sure the cook levels are flipped…I have also found on a newer crockpot which cooks at higher temps, that I can cook on high for 4 hrs, or on low for 6 hrs I get great reviews from friends and family either way!
