Ground Beef Chalupas
Fun to build, fun to eat! In our homes we love meals that you can "build yourself" so everyone is happy at the dinner table! Another great thing about this recipe aside from its delicious flavor? It can be made into makeover meals (shhhh! Don't tell them it is leftovers!) by putting in a taco salad, nachos, burritos, or whatever you like!
4 quart or larger slow cooker
- 1 to 1 ½ pounds ground beef, uncooked
- 1 onion, chopped
- 1 (4-ounce) can green chiles
- 1 tablespoon minced garlic
- 1 packet taco seasoning
- 1 to 1 ½ cups cherry tomatoes, halved
- ½ cup chopped green onions
- 1 package corn tostadas
- Refried beans
- Shredded lettuce
- Shredded cheese
- Sour cream
Place uncooked ground beef in slow cooker with onion, green chiles, and garlic.
Cover and cook on LOW for 6 hours.
Drain meat of grease and return to slow cooker.
Add taco seasoning, green onions, and tomatoes. Stir well.
Cover and cook on LOW for 1 hour.
Assemble chalupas with toppings as desired on top of corn tostadas
