A slightly spicy alternative to stuffed peppers. I combined a few ideas from other recipes and added a few of my own.

A healthy spin on chili that is delicious! You can use ground beef, but the ground turkey makes it very lean. Great dish for fall! And easy to make ahead and freeze.

Ingredients

  • 2 Pounds Ground turkey
  • 1 Can White hominy
  • 1 Can Golden hominy
  • 1 Can Corn, drained
  • 1 Can Diced tomatoes or Rotel
  • 1 Can Black beans, drained
  • 1 Can Chile beans
  • 1 Package taco seasoning mix
  • 1 Package Rach dressing mix
  • 2 Teaspoons Cumin
  • 1 Pinch Minced garlic
  • 1 Onion, chopped
  • 1 Cup Water

Directions

  1. Step One

Brown meat and drain off fat

  2. Step Two

Place all ingredients in slow cooker and cook on low for 4-6 hours.

  3. Step Three

Top with shredded cheese and serve with fritos

A-M-A-Z-I-N-G!!! We have made several batches of chili using different recipes & this, by far, is the BEST! My kids wanted seconds! It is a light chili that hits all of the right spots! Thanks, Crockin’ Girls! :)

This was delicious. I’d never had hominy before, but it was a wonderful addition to this tasty chili. I followed the recipe exactly and I wouldn’t change a thing. It’s seasoned perfectly and very tasty.
