BIG thanks to Larry North for coming on and sharing this incredibly easy and incredibly healthy meal! The best thing about this meal is everything is optional, make it vegetarian or substitute any veggies for your favorites, eating healthy has never been easier!
Ingredients
- 3 skinless boneless chicken breasts, cubed
- 2 sweet potatoes, peeled and cubed
- 1 beet, peeled and cubed
- 1 cup cauliflower florets
- 1 cup onion, chopped
- 1 cup frozen peas
- 1 cup garbanzo beans, drained
- 1 cup black beans, drained
- 1 bunch fresh spinach
- ¼ teaspoon pepper
- ½ teaspoon garlic powder
- ½ teaspoon curry powder
- 2 tablespoons coconut oil (optional)
Directions

Step One
Place all ingredients into the slow cooker

Step Two
cook on LOW for 4-6 hours

This was amazing! Wasn’t sure at first, but decided to go for it. The only changes were not adding the beets (I didn’t have) and added spinach at the end. This was great! Hubby and picky 6 year old loved it! Very hearty, yet clean. Keep the healthy crock pot meals coming!

This may be perfect for some people but it would just not go over in my family. The original recipes are what brought me to this site. I could substitute certain items for things I felt were “healthier” but my family would just not be interested in the majority of these newer items. Fine for some; just not for us. I’ve been cooking from your original cookbook during the time these newer videos are playing. Please, please come back Jenna and Nicole. Or at least fill us in on what we can expect from this site. Thanks.
