I love this delicious bread! I spread yummy honey butter on a slice for breakfast with a hot cup of coffee...and another slice at the end of the day for dessert! - Nicole

Ingredients

  • 1/2 Can Pumpkin
  • 1/2 (8 oz) block Cream cheese, softened
  • 2 Eggs
  • 1 Cup Sugar
  • 1 Teaspoon Baking soda
  • 2 Cups Flour
  • 1 Teaspoon Cinnamon
  • 1 Stick of butter or margarine, melted
  • 1 Cup Pecans or nut of choice (optional)

Directions

  1. Step One

    In a medium to large bowl, mix the pumpkin and cream cheese together.

  2. Step Two

    Mix in the next six ingredients until well blended. Stir in nuts

  3. Step Three

    Spray bottom of slow cooker with baking spray and pour batter into crock.

  4. Step Four

    Cover and cook on HIGH for 3 hours or until toothpick inserted comes out clean.

  5. Step Five

    When done, remove crock from heat and let cool for 10-15 minutes. Flip onto a platter and serve at warm
    or room temperature. We like to eat ours warm with honey butter and a good, hot cup of coffee!

    I tried this and after only 1 hour the sides and bottoms were burned and entire bread was way overdone. Is it supposed to be cooked on low? Or in a small crock? I am going to give it another try because the pics look so good:)!

    I have already made this twice since I saw the video up! It is delicious bread! Exactly what I wanted for fall. Tip: The first loaf I cooked was burned at the bottom so the next one I only left in the crock for 2 hours and 15 minutes (checked with toothpick) and it was perfect!

    Tara, those are nuts not chocolate chips. However, if you do want to add chocolate I’m sure you can! I’d add 1-2 cups.
    Anita, if you watch the entire video the pumpkin bread recipe is at the end of the video. We actually made 3 separate pumpkin recipes!
    Judi, sorry to hear that it wasn’t what you were wanting. Just FYI, you can put your loaf pan in your crock, put water in your crock til it reaches halfway up your loaf pan, and then place a paper towel underneath the lid of you crock. Try it!
    Laura, we have used our 6qt GE for this one, too! It’s perfect for desserts!
    Michelle, if your crock cooks hot then you should definitely turn the heat down. Sorry, girl!
    Melissa, just the regular size of pumpkin puree…I think it’s 15oz.

    The bread was good but I only had it in the crock for two hours and the edg started to burn. Maybe it shoul cook at medium?

    What size crock is best for this recipe? I have the GE 6 or 7qt oval…too big ? If so could I double the recipe?

    Don’t think I’ll make this again in the crockpot. I used the same recipe (who can leave a 1/2 can of pumpkin sitting around) in a loaf pan in the oven and baked for 1 hour.

    3 hours was too long in my crockpot. I had burnt edges. Plus the loaf pan makes better slices. Good bread though.
