This was a recipe my Mom cooked in the oven and we changed some things around for the crock pot. Never any left when I carry it to family functions.
Yummy Enchiladas easy to make in the slow cooker
Another one of my (Nicole) family favorites that I couldn’t resist the urge to crock! A lighter pasta dish when you are tired of cooking the same old thing....
This delicious side is not only great for the holidays, but accompanies any main meal. Feel free to add chicken, and it can be your complete dinner!
Used 6-quart slow cooker
- 2 Cups cornbread, prepared & crumbled
- 2 Cups chopped yellow squash
- 1 small onion, diced
- 1/3 sticks oleo, melted
- 1/4 Teaspoon pepper, add more to taste
- 1 Can cream of chicken (can sub for vegetable broth)
Prepare cornbread and break into crumbles.
In a mixing bowl combine crumbled cornbread, squash, onion, oleo, pepper, and soup. Mix well
Spray the crock with non stick cooking spray.
Pour squash mixture into the slow cooker.
Cover and cook on HIGH for 3 hours.
